There’s a fire pit at the heart of MoVida
Aqui. The boys fire up the charcoal inside it
a few hours before lunch and it burns all day
until last orders at night.
Spanish cook so much
over coals, whole fish bathed in jamón
flavoured brine, thick steaks, red peppers for
romesco sauce, pork loin.
Our new big space by
the dome of the Supreme Court gives us the chance
to cook the food from Spain we never could in
our other tiny kitchens - paellas, made with
slow-cooked sofrito, chorizo and mussels.
It’s
a big, happy space, flooded with light with little
nooks and special spaces.
